Los Angeles’ Niku Nashi is a destination for plant-based sushi rolls, including uniquely colored ones like The Barbie Roll. This new seasonal offering for vegans and non-vegans alike is a limited-time treat prepared with fried oyster mushroom, pickled cabbage, plant-based caviar, plant-based spicy tuna, burdock root and avocado, all wrapped in pink soy paper. This plant-based sushi dish is accented with sesame, spicy aioli, and siracha, offering an aesthetically appealing, texture-rich and sustainable way to enjoy sushi.

“I’ve always believed that Barbie was vegan,” said Niko Zaragoza, Executive Chef and Co-owner of Niku Nashi, “I suspect her radiant glow and her partner’s ‘Kenergy’ stem from a plant-based diet.”

The Barbie Roll can be enjoyed at Niku Nash for lunch or dinner throughout the month of August, which makes it a perfect treat after seeing the new Barbie Movie in theaters.
